Method

Beef Preparation

  1. 1

    Season the Beef

Rub the beef belly with salt, black pepper, cumin, garlic powder, and onion powder on all sides.

  2. 2

    Slow Cook

Place the seasoned beef belly in a slow cooker. Pour the beef broth over the top. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.

  3. 3

    Shred the Beef

Once the beef is cooked, remove it from the slow cooker and let it cool slightly. Shred the beef using two forks.

Taco Assembly

  1. 4

    Prepare the Onions

While the beef is cooking, finely chop the onion and set aside.

  2. 5

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

  3. 6

    Assemble the Tacos

Place a generous amount of shredded beef onto each tortilla. Top with chopped onion, cilantro, and a drizzle of salsa verde.

  4. 7

    Serve

Serve the tacos with lime wedges on the side for squeezing over the tacos before eating.
