Mix the Cheeses
In a bowl, combine the shredded Oaxacan cheese and Monterey Jack cheese. Mix well to combine.

Add the cooked chorizo to the cheese mixture, stirring to evenly distribute the chorizo throughout the cheese.
Pico de Gallo Preparation

Combine Ingredients
In a medium bowl, mix together the diced tomatoes, chopped red onion, and chopped cilantro.

Season the Mixture
Add lime juice and salt to the tomato mixture, stirring well to combine. Set aside to let the flavors meld.

Preheat Oven
Preheat your oven to 200°C (400°F).

Grill the Tortillas
While the queso is baking, heat a grill pan or skillet over medium heat. Grill the flour tortillas for 1-2 minutes on each side until they are warm and slightly charred.
Serving

Once the queso is bubbling, remove it from the oven. Serve hot with pico de gallo on top and grilled tortillas on the side for dipping.
