Season the Lamb
Rub the lamb shanks with salt, black pepper, cumin, and smoked paprika. Let them marinate for at least 30 minutes to enhance the flavor.

Combine Ingredients
In the same pot, add the blended chile sauce, the remaining broth, bay leaves, and the seared lamb shanks. Bring to a simmer.

Slow Cook
Cover the pot and reduce the heat to low. Let it cook for about 3-4 hours or until the lamb is tender and easily pulls apart.

Skim Fat
After cooking, skim off any excess fat from the surface of the consomé.
