Rice Preparation

    Rinse the Rice

    Rinse the long-grain white rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess starch.

    Soak the Rice

    Combine the rinsed rice and 4 cups of water in a bowl. Let it soak for at least 4 hours, or overnight for best results.

Flavoring and Blending

    Blend the Ingredients

    After soaking, drain the rice and add it to a blender. Add the soaked water, cinnamon sticks, sugar, vanilla extract, and a pinch of salt.

    Blend Until Smooth

    Blend the mixture on high until smooth and creamy, about 1-2 minutes. You may need to do this in batches if your blender is small.

Straining and Serving

    Strain the Mixture

    Using a fine-mesh strainer or cheesecloth, strain the blended mixture into a large pitcher to separate the liquid from the rice solids.

    Add Milk

    Stir in 2 cups of milk (or almond milk) into the strained liquid. Adjust sweetness if desired by adding more sugar.

    Chill and Serve

    Refrigerate the horchata for at least 1 hour before serving over ice. Garnish with a sprinkle of cinnamon on top if desired.
