Method

Preparation of Fish

  1. 1

    Prepare the Fish

Rinse the fresh fish fillets under cold water and pat dry with paper towels. Season both sides with olive oil, salt, and black pepper.

  2. 2

    Cook the Fish

Heat a skillet over medium-high heat. Add the seasoned fish fillets and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from heat and set aside.

Cilantro-Poblano Sauce

  1. 3

    Make the Sauce

In a blender, combine the chopped cilantro, roasted poblano pepper, minced garlic, lime juice, and salt. Blend until smooth. Adjust seasoning to taste if necessary.

Tomato Salad

  1. 4

    Prepare the Salad

In a large bowl, combine diced tomatoes, finely chopped red onion, and chopped cilantro. Drizzle with lime juice and olive oil, then season with salt. Toss gently to combine.

Plating

  1. 5

    Serve the Dish

On each plate, place a fillet of fish, drizzle generously with the cilantro-poblano sauce, and serve with a side of tomato salad. Garnish with lemon wedges.
