Preheat Oven
Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.

Prepare the Filling
In a mixing bowl, combine the shredded cheese, refried beans, and chopped onion. Mix well until all ingredients are evenly distributed.
Assembly

Fill the Tortillas
Take a corn tortilla and place a generous amount of the filling mixture along the center. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish. Repeat for all tortillas.

Add Sauce
Pour the chili sauce evenly over the assembled enchiladas. Sprinkle ground cumin and salt over the top to taste.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Remove the enchiladas from the oven and let them cool for a few minutes. Top with sour cream, chopped cilantro, and sliced jalapeños to taste. Enjoy!
