Chicken Milanesa Preparation

Prepare Chicken
Place chicken breasts between two sheets of plastic wrap. Pound them to an even thickness (about 1/2 inch) using a meat mallet or rolling pin.

Bread the Chicken
Coat each chicken breast first in flour, shaking off excess, then dip into the egg, and finally coat with the bread crumbs. Press the crumbs onto the chicken to adhere well.

Fry the Chicken
Heat oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Cemita
On the bottom half of each potato bun, layer 2 slices of ham, followed by the crispy chicken milanesa, a generous portion of Oaxaca cheese, and pickled jalapeños. Drizzle with chipotle aioli and top with the other half of the bun.

Serve
Cut the cemitas in half if desired and serve with a side of seasonal fruit.
