    Marinate the Steak

    In a bowl, combine olive oil, minced garlic, ground cumin, ground black pepper, and salt. Add the flank steak and ensure it is well coated. Marinate for at least 1 hour or overnight in the refrigerator.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 6-8 minutes on each side for medium-rare, or until desired doneness is reached. Let it rest for 10 minutes before slicing thinly against the grain.

    Warm Tortillas

    In a dry skillet over medium heat, warm the Oaxacan corn tortillas for about 30 seconds on each side until they are pliable. Keep them warm in a towel.

    Assemble Tacos

    To assemble, place sliced steak on a tortilla, top with crumbled Oaxacan cheese, confit onions, and salsa verde. Serve immediately.

    Prepare the Onions

    In a saucepan, combine the sliced red onions, olive oil, and fresh thyme. Cook over low heat for about 45 minutes, stirring occasionally, until the onions are soft and caramelized.

    Cook the Tomatillos

    In a saucepan, bring water to a boil. Add the tomatillos and cook for about 5 minutes until they turn bright green and soften. Drain and let cool.

    Blend the Salsa

    In a blender, combine the cooked tomatillos, fresh cilantro, chopped jalapeño, lime juice, and salt. Blend until smooth. Adjust seasoning if necessary.
