Sauce and Seafood

Method

Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to package instructions. Drain and set aside.

  2. 2

    Prepare the Sauce

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  3. 3

    Add the Cream and Alcohol

Pour in the heavy cream and stir to combine. Increase the heat slightly and add vodka. Let it simmer for 5 minutes, allowing the alcohol to cook off.

  4. 4

    Flambée the Sauce

Carefully ignite the sauce with a long lighter or match. Allow the flames to subside naturally. Stir in limoncello and grated Parmesan cheese until smooth.

  5. 5

    Cook the Seafood

In a separate pan, add a little butter and sauté shrimp and scallops until they are just cooked, about 3-4 minutes. Season with salt and black pepper.

  6. 6

    Combine Everything

Add the cooked spaghetti to the sauce and toss to coat. Gently fold in the sautéed seafood.

  7. 7

    Serve

Garnish with fresh parsley and additional Parmesan cheese if desired. Serve immediately.
