1. Prepare the Risotto
In a saucepan, heat the vegetable broth and keep it warm. In a separate pot, heat olive oil over medium heat and sauté the onion until translucent. Add garlic and Arborio rice, stirring for 2 minutes. Gradually add warm broth, one ladle at a time, allowing the rice to absorb the liquid before adding more. Cook until the rice is al dente. Stir in Parmesan cheese and season with salt and pepper. Allow to cool.
2. Form the Arancini
Once the risotto has cooled, take a small portion of the rice mixture and flatten it in your palm. Place a cube of mozzarella in the center and mold the rice around it to form a ball. Repeat until all the mixture is used.
3. Coat the Arancini
Set up a breading station with flour, beaten eggs, and breadcrumbs. Roll each arancini ball first in flour, then dip in egg, and finally coat with breadcrumbs.
4. Fry the Arancini
In a deep pot, heat olive oil to 350°F (175°C). Fry the arancini in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
5. Serve
Garnish with chopped parsley and serve hot with marinara sauce on the side.
