Directions

  1. 1

    Prepare the Tomatoes

Wash the ripe tomatoes and cut them in half. Grate the tomatoes using a box grater, discarding the skins. You should end up with a pureed tomato mixture.

  2. 2

    Toast the Bread

Slice the baguette or rustic bread in half lengthwise. Drizzle with 2 tablespoons of olive oil and toast under a broiler or on a grill until golden brown and crispy.

  3. 3

    Prepare the Garlic

Peel the garlic cloves and slice them in half. Rub the cut side of the garlic on the toasted bread to impart flavor.

  4. 4

    Assemble the Dish

Spread the grated tomato evenly over the toasted bread. Drizzle with the remaining 2 tablespoons of olive oil and sprinkle with salt to taste.

  5. 5

    Add Prosciutto

Layer the prosciutto slices over the tomato-covered bread.

  6. 6

    Garnish

Add fresh basil or parsley on top for garnish and additional flavor.

  7. 7

    Serve

Cut the bread into serving sizes and enjoy immediately while fresh.
