    Melt the Chocolate

    Chop the dark chocolate into small pieces and place in a heatproof bowl. Melt over a double boiler or in the microwave in short bursts, stirring until smooth. Let it cool slightly.

    Separate the Eggs

    Separate the egg yolks from the egg whites. Place the egg yolks in a large mixing bowl and the egg whites in a separate clean bowl.

    Whisk the Yolks

    Add half of the granulated sugar (50g) to the egg yolks and whisk until pale and creamy. Stir in the melted chocolate and vanilla extract until fully combined.

    Whip the Egg Whites

    Using a hand mixer or stand mixer, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining granulated sugar (50g) and continue whipping until stiff peaks form.

    Fold the Mixtures

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until no streaks remain.

    Chill the Mousse

    Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

    Serve

    Serve chilled, optionally topped with whipped cream or chocolate shavings.
