Preparation Steps
- 1
Prepare the Artichokes
Trim the stems of the artichokes and remove the tough outer leaves. Cut the top off each artichoke and scoop out the choke using a spoon. Place the cleaned artichokes in a bowl of water with lemon juice to prevent browning.
- 2
Cook the Artichokes
Bring a large pot of salted water to a boil. Add the artichokes and simmer for about 20-25 minutes until tender. Drain and let cool.
- 3
Make the Pistachio Dressing
In a small bowl, combine olive oil, minced garlic, lemon juice, chopped parsley, salt, and black pepper. Mix well.
- 4
Assemble the Dish
Once the artichokes are cool, place them on a serving plate. Tear the burrata cheese and place it inside the artichokes. Drizzle the pistachio dressing over the artichokes and sprinkle with shelled pistachios.
- 5
Serve
Serve the artichauts à la juive warm or at room temperature as a delicious appetizer or light main course.
