Method

Preparation of Bone Marrow

    Prepare the Bones

    Preheat your smoker or oven to 350°F (175°C). Season the marrow bones with salt and black pepper. Place them in the smoker or on a baking sheet.

    Smoke the Bones

    Smoke the marrow bones for about 30-40 minutes, or until the marrow is soft and begins to separate from the bone.

Making Tapenade

    Blend Ingredients

    In a food processor, combine black olives, capers, minced garlic, olive oil, and lemon juice. Blend until smooth and set aside.

Making Chimichurri

    Mix Ingredients

    In a bowl, mix chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, salt, and pepper. Stir until well combined and set aside.

Preparing Red Wine Jus

    Simmer the Jus

    In a saucepan, combine red wine and beef stock. Bring to a simmer and let it reduce by half. Stir in butter, salt, and pepper to taste.

Preparing Toast

    Toast the Bread

    Spread butter on both sides of the bread slices and toast them in a skillet or toaster until golden brown.

Assembly

    Serve

    Place the smoked bone marrow on a plate, serve with black olive tapenade, chimichurri, red wine jus, grainy mustard, and toasted bread on the side.
