Method

Making the Pasta

    Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center, crack the eggs into the well, and mix with a fork until the dough begins to come together. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Roll the Pasta

    After resting, divide the dough into quarters. Roll each quarter out into thin sheets using a pasta machine or a rolling pin. Cut the sheets into long strips to form tagliatelle. Dust with flour to prevent sticking.

Braised Beef

    Sear the Beef

    In a large pot, heat olive oil over medium-high heat. Season the beef with salt and pepper, and sear on all sides until browned. Remove the beef and set aside.

    Cook the Vegetables

    In the same pot, add onions, carrots, and celery. Sauté until softened, about 5-7 minutes. Add garlic and cook for another minute.

    Braise the Beef

    Return the beef to the pot, add red wine, beef broth, thyme, and bay leaf. Bring to a simmer, cover, and reduce heat to low. Cook for about 2.5 to 3 hours until the beef is tender and easily shreds.

    Shred the Beef

    Remove the beef from the pot and shred it with two forks. Return the shredded beef to the pot and stir to combine with the sauce.

Combining and Serving

    Cook the Tagliatelle

    Bring a large pot of salted water to a boil. Cook the tagliatelle for 3-4 minutes until al dente. Drain and reserve some pasta water.

    Mix and Serve

    Toss the cooked tagliatelle with the braised beef and sauce. Add truffle butter and Parmesan cheese, mixing until well combined. Adjust with reserved pasta water if necessary. Serve warm.
