Steak Preparation

    Season the Steak

    Generously season the filet steak with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Sear the steak for 4-5 minutes on each side for medium-rare, adjusting the time for your desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Salsa Verde Preparation

    Combine Ingredients

    In a bowl, combine the chopped parsley, basil, minced garlic, capers, and red wine vinegar.

    Add Olive Oil

    Slowly drizzle in the olive oil while stirring until well combined. Season with salt and pepper to taste.

Sweet Potato Mash Preparation

    Boil Sweet Potatoes

    In a large pot, boil sweet potatoes in salted water until tender, about 15-20 minutes.

    Mash Sweet Potatoes

    Drain the sweet potatoes and return to the pot. Add butter, milk, salt, and pepper, then mash until smooth.

Red Wine Reduction Preparation

    Sauté Shallots

    In the same skillet used for the steak, add minced shallots and sauté for 2-3 minutes until softened.

    Add Wine and Broth

    Pour in the red wine and beef broth, scraping the bottom of the skillet to deglaze. Bring to a boil and reduce heat to simmer until reduced by half, about 10-15 minutes.

    Finish the Sauce

    Whisk in butter, and season with salt and pepper to taste. Remove from heat.
