Preparation of the Meat

Season the Tournedos
Pat the beef tournedos dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Tournedos
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the tournedos and sear for 3-4 minutes on each side for medium-rare. Remove the tournedos from the skillet and let them rest.
Cooking the Sauce

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil and the butter over medium heat. Add the chopped shallots and minced garlic, cooking until translucent, about 2-3 minutes.

Deglaze the Pan
Pour in the dry sherry, scraping the bottom of the pan to deglaze. Allow the sherry to reduce by half, about 3-4 minutes.

Add the Beef Stock
Add the beef stock and chopped thyme to the skillet. Simmer the sauce for an additional 5 minutes until it thickens slightly.
Final Assembly

Combine Tournedos with Sauce
Return the rested tournedos to the skillet, spooning the sauce over them. Cook for an additional 2-3 minutes to warm through.

Serve
Plate the tournedos with the mushroom sherry sauce spooned over the top. Garnish with additional fresh thyme if desired.
