Base Preparation

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs, then add milk, oil, and vanilla extract. Mix well.

  4. 4

    Combine Mixtures

Pour the wet mixture into the dry ingredients and stir until just combined.

  5. 5

    Bake

Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Fruits Preparation

  1. 6

    Prepare Fruits

While the base is baking, wash and slice the mixed berries, banana, and peach into bite-sized pieces.

Meringue Preparation

  1. 7

    Beat Egg Whites

In a clean, dry bowl, beat the egg whites until foamy.

  2. 8

    Add Cream of Tartar

Add cream of tartar and continue beating until soft peaks form.

  3. 9

    Add Sugar Gradually

Gradually add granulated sugar, beating until stiff peaks form.

Assembly

  1. 10

    Assemble Layers

Once the cake base has cooled, layer the fruits evenly on top of the cake.

  2. 11

    Top with Meringue

Spread the meringue evenly over the fruit layer, making sure to seal the edges.

  3. 12

    Bake Meringue

Return the assembled cake to the oven and bake for an additional 10-15 minutes or until the meringue is golden brown.

  4. 13

    Cool and Serve

Allow the cake to cool slightly before dusting with powdered sugar and garnishing with fresh mint leaves. Slice and serve.
