Preparation

    Prepare the Seafood

    Clean and devein the shrimp, scrub the mussels, and slice the calamari into rings. Cut the white fish into chunks.

    Prepare the Vegetables

    Finely chop the onion, mince the garlic, dice the red bell pepper, and grate the tomato.

Cooking

    Heat the Oil

    In a large paella pan or wide skillet, heat the olive oil over medium heat.

    Sauté the Vegetables

    Add the chopped onion and red bell pepper to the pan and sauté for about 5 minutes until softened. Add minced garlic and cook for another minute until fragrant.

    Add the Tomato and Spices

    Stir in the grated tomato, paprika, salt, and black pepper. Cook for 3-4 minutes until the mixture has thickened.

    Add Seafood

    Add the shrimp, mussels, calamari, and white fish to the pan, cooking for about 2-3 minutes until they start to turn opaque.

    Add Noodles and Broth

    Stir in the fideua noodles and pour in the fish stock. Add the saffron threads, stirring everything to combine.

    Cook the Fideua

    Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and let simmer for about 10-12 minutes, or until the noodles are tender and the liquid has mostly absorbed. Do not stir during this time.

    Garnish and Serve

    Remove from heat and let it rest for 5 minutes. Garnish with chopped parsley and serve with lemon wedges.
