Preparing the Potatoes

Peel and Cut the Potatoes
Peel the Russet potatoes and cut them into bite-sized cubes (about 1 inch).

Soak the Potatoes
Place the potato cubes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes them crispier when fried.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a kitchen towel.

Fry the Potatoes
Carefully add the dried potato cubes to the hot oil in batches. Fry until they are golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt and black pepper.
Preparing the Spicy Tomato Sauce

Add Tomato Paste and Tomatoes
Stir in the tomato paste and cook for another minute. Then, add the crushed tomatoes and stir well.

Season the Sauce
Add paprika, red pepper flakes, sugar, salt, and black pepper to the sauce. Stir to combine and let simmer for 10-15 minutes, allowing the flavors to meld together.

Adjust the Seasoning
Taste the sauce and adjust seasoning if necessary. If you prefer more heat, add additional red pepper flakes.

Serve the crispy fried potatoes hot, topped with the spicy tomato sauce and garnished with chopped fresh parsley.
