    Prepare the Seafood

    Clean and prepare the lobster, shrimp, clams, and mussels. Set aside.

    Prepare the Meats

    Cut the chicken thighs, chorizo, and pork tenderloin into bite-sized pieces.

    Chop Vegetables

    Dice the onion, bell pepper, and tomato. Mince the garlic. Trim the green beans.

Cooking

    Cook the Meats

    In a large paellera pan, heat the olive oil over medium heat. Add the chicken, chorizo, and pork. Cook until browned.

    Add Vegetables

    Add the onion, bell pepper, garlic, and green beans to the pan. Sauté until the vegetables are softened.

    Add Rice and Liquid

    Stir in the bomba rice, saffron, paprika, salt, and black pepper. Pour in the water or seafood stock, mixing well.

    Add Seafood

    Arrange the lobster, shrimp, clams, and mussels over the rice. Do not stir after this point.

    Simmer

    Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pan. Cook for about 15-20 minutes until the rice is cooked and seafood is done.

    Rest and Serve

    Remove the pan from heat and let it rest for 5 minutes before serving. Garnish with lemon wedges if desired.
