Preparation

    Prepare the Seafood

    Clean and prepare all seafood ingredients. Peel and devein the shrimp, clean the mussels, and slice the calamari.

    Prepare the Broth

    In a saucepan, heat the chicken or seafood broth until hot, then add the saffron threads to infuse.

Cooking

    Sauté the Vegetables

    In a large paella pan or wide skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and chopped red bell pepper, cooking for an additional 3 minutes.

    Add Tomatoes and Rice

    Stir in the diced tomato and cook for 2 minutes. Add the bomba rice and smoked paprika, stirring well to coat the rice with the oil and vegetables.

    Deglaze with Wine

    Pour in the white wine and let it simmer for about 2 minutes until reduced by half.

    Add Broth and Simmer

    Add the hot broth to the pan. Stir in the peas, and season with salt and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 10 minutes without stirring.

    Add Seafood

    After 10 minutes, gently nestle the shrimp, mussels, calamari, and fish chunks into the rice. Cover the pan with a lid or aluminum foil and cook for another 10-12 minutes, until the seafood is cooked and the rice has absorbed the liquid.

    Rest and Serve

    Once cooked, remove the pan from heat and let it rest for 5 minutes. Garnish with lemon wedges and chopped parsley before serving.
