Method

Oysters Preparation

    Clean the Oysters

    Using a brush, clean the oysters under cold running water to remove any debris or sand. Scrub the shells thoroughly.

    Shuck the Oysters

    Carefully open the oysters with an oyster knife, discarding the top shell. Place the oysters on a baking sheet, keeping them in their bottom shells.

Rockefeller Topping Preparation

    Sauté Shallots

    In a skillet, melt 4 tablespoons of butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

    Add Spinach

    Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat.

    Combine Ingredients

    In a mixing bowl, combine the sautéed spinach and shallots, grated Parmesan cheese, Worcestershire sauce, and hot sauce. Mix well.

Crab Meat Champagne Sauce Preparation

    Sauté Shallots

    In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes.

    Add Champagne

    Pour in the champagne and bring to a simmer. Allow it to reduce by half, about 5-7 minutes.

    Add Cream and Crab Meat

    Stir in the heavy cream and simmer for another 5 minutes. Then gently fold in the lump crab meat. Season with salt and black pepper to taste.

Assembly and Baking

    Assemble the Oysters

    For half of the oysters, spoon the Rockefeller mixture over the oysters. For the other half, spoon the crab meat champagne sauce over the oysters.

    Top with Breadcrumbs

    Sprinkle breadcrumbs evenly over all the oysters and drizzle with olive oil.

    Bake the Oysters

    Preheat the oven to 400°F (200°C). Bake the oysters for about 12-15 minutes or until the topping is golden brown and bubbly.

    Serve

    Remove from the oven, let cool slightly, then serve hot with lemon wedges on the side.
