Preparing the Base

Heat the Dairy
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Whisk the Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Custard
Cook over medium-low heat, stirring constantly with a wooden spoon until the mixture thickens enough to coat the back of the spoon. This should take about 8-10 minutes.

Add Vanilla
Remove the saucepan from heat and stir in the vanilla extract. Let the custard cool to room temperature.
Flavoring the Gelato

Prepare Flavorings
For chocolate gelato, whisk in the cocoa powder until fully dissolved. For fruit flavors, puree the fresh fruit and then mix it into the cooled custard. For hazelnut, stir in Nutella or chocolate hazelnut spread. For coffee, add the coffee grounds.
Churning and Freezing

Churn the Mixture
Pour the flavored custard into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
