Method

Preparing the Steak

  1. 1

    Season the Steak

Generously season both sides of the ribeye steaks with salt and black pepper.

  2. 2

    Preheat the Grill

Preheat your grill to high heat (about 450-500°F or 230-260°C).

  3. 3

    Grill the Steak

Brush the grill grates with olive oil. Place the seasoned ribeye steaks on the grill. Grill for about 4-5 minutes on one side, then flip and grill for an additional 4-5 minutes for medium-rare.

  4. 4

    Rest the Steak

Remove the steaks from the grill and let them rest for 5-10 minutes before slicing.

Making the Chimichurri Sauce

  1. 5

    Prepare the Herbs

Finely chop the fresh parsley and oregano. You can use a food processor for a finer consistency.

  2. 6

    Mix Ingredients

In a bowl, combine the chopped parsley, oregano, minced garlic cloves, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

  3. 7

    Blend the Sauce

Stir the mixture well until all ingredients are thoroughly combined. Adjust seasoning to taste.

  4. 8

    Serve

Serve the grilled ribeye steaks with a generous drizzle of chimichurri sauce on top.
