Prepare the Chocolate

    Melt the Chocolate

    In a heatproof bowl over a pot of simmering water (double boiler method), melt the dark chocolate. Stir occasionally until smooth and fully melted. Remove from heat and allow to cool slightly.

Whip the Egg Mixture

    Separate the Eggs

    Carefully separate the egg yolks from the egg whites. Place the yolks in a mixing bowl and the whites in another clean, dry bowl.

    Mix the Egg Yolks

    Add the granulated sugar to the egg yolks. Using a whisk or electric mixer, beat the yolks and sugar together until the mixture is pale and thick.

    Combine with Chocolate

    Gradually add the melted chocolate to the egg yolk mixture, stirring continuously until well combined. Add vanilla extract and mix well.

    Whip the Egg Whites

    Using an electric mixer, beat the egg whites until stiff peaks form. This will add lightness to the mousse.

Incorporate the Cream

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

    Fold in the Cream

    Gently fold the whipped cream into the chocolate mixture until fully combined, being careful not to deflate the whipped cream.

    Add Egg Whites

    Next, fold in the whipped egg whites in two parts, ensuring everything is well incorporated.

Chill and Serve

    Transfer to Serving Dishes

    Spoon the mousse into individual serving dishes or cups. Smooth the tops with a spatula.

    Cover and refrigerate the mousse for at least 2 hours, or until set.
