Prepare the Beef

    Season and Marinate

    Season the rib of prime beef generously with salt and black pepper. Optionally, marinate for 1-2 hours in the refrigerator for enhanced flavor.

    Preheat the Grill

    Preheat your grill to a high temperature (around 200°C or 400°F) as you prepare the wine sauce.

Make the Red Wine Sauce

    Sauté Aromatics

    In a saucepan over medium heat, melt the butter and olive oil. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-5 minutes.

    Pour in the red wine and bring to a simmer. Allow it to reduce by half before adding the beef broth.

    Simmer the Sauce

    Add thyme, salt, and pepper to the saucepan. Simmer for another 10-15 minutes, stirring occasionally until thickened.

Grill the Beef

    Place the seasoned rib of prime beef on the grill. Grill for about 15-20 minutes on each side for medium-rare, or until your desired doneness is achieved.

Prepare Garden Vegetables

    In a bowl, toss the sliced carrots, zucchini, bell pepper, and asparagus with olive oil, salt, and pepper. Grill them on a medium heat for about 8-10 minutes until tender and slightly charred.

    Slice the rested rib of prime beef and plate it alongside the grilled garden vegetables. Drizzle the red wine sauce over the beef and serve hot.
