    Slice the chorizo sausage into bite-sized pieces. Mince the garlic cloves and finely chop the onion.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.

    Brown the Chorizo

    Add the sliced chorizo to the skillet. Cook, stirring occasionally, until the chorizo is browned and releases its oils, about 5-7 minutes.

    Pour in the red wine, scraping the bottom of the pan to incorporate any browned bits. Add the bay leaves and black peppercorns. Bring to a simmer.

    Reduce the heat to low and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld. Season with salt to taste.
