Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with flour.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Heat in the microwave in 30-second increments, stirring in between, until fully melted and smooth.

  3. 3

    Mix in Sugar and Eggs

Add the granulated sugar into the melted chocolate mixture and stir until well combined. Then, add the whole eggs and egg yolks, mixing until incorporated.

  4. 4

    Add Vanilla, Flour, and Salt

Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Be careful not to overmix.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  6. 6

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  7. 7

    Cool Slightly

Remove from the oven and let the cakes sit for 1 minute. Then, carefully run a knife around the edges to loosen them.

  8. 8

    Invert and Serve

Invert each ramekin onto a serving plate. Let it sit for a few seconds, then lift the ramekin off to reveal the lava cake. Serve immediately with a scoop of vanilla ice cream.

    Add Finishing Touches

Dust the top of the lava cake with powdered sugar and garnish with fresh berries, if desired.
