Prepare the squid
Clean and slice the fresh squid into rings, ensuring they are uniform in size for even cooking.

Mix the dry ingredients
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure even distribution of the spices.

Dredge the squid
Toss the squid rings in the flour mixture until evenly coated. Shake off any excess flour.

Heat the oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of the flour mixture into it; it should sizzle immediately.

Fry the squid
Carefully add the coated squid rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and serve
Using a slotted spoon, remove the fried squid from the oil and drain on paper towels. Serve hot with aioli on the side.

Combine ingredients
In a small bowl, mix the mayonnaise, minced garlic, lemon juice, and chopped parsley. Stir until well combined.

Add salt and black pepper to taste, adjusting as necessary to achieve your desired flavor.

Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld together.
