Cake Base Preparation

    Preheat Oven

    Preheat the oven to 350°F (175°C).

    Beat Eggs and Sugar

    In a mixing bowl, beat the eggs and granulated sugar together until the mixture is thick and pale, about 5 minutes.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour and baking powder.

    Mix Together

    Gently fold the dry ingredients into the egg mixture. Add the vanilla extract and mix until just combined.

    Bake Cake

    Pour the batter into a greased and lined baking sheet (approximately 10x15 inches) and smooth the top. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

    Cool Cake

    Once baked, remove from the oven and let the cake cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Pine Nut Filling Preparation

    Toast Pine Nuts

    In a skillet over medium heat, toast the pine nuts until golden brown, stirring frequently to prevent burning.

    Whip Egg Whites

    In a clean mixing bowl, whip the egg whites until soft peaks form.

    In another bowl, mix the toasted pine nuts, granulated sugar, and a pinch of salt. Fold the whipped egg whites into the nut mixture gently until just combined.

    Add Butter

    Melt the butter and fold it into the filling mixture.

Assembly

    Prepare Cake for Assembly

    When the cake is completely cool, sprinkle a clean kitchen towel with powdered sugar and turn the cake upside down onto the towel.

    Spread Filling

    Spread the pine nut filling evenly over the top of the cake.

    Roll the Cake

    Starting from one end, carefully roll the cake into a tight log using the towel to help guide it. Be gentle to prevent breaking.

    Wrap the rolled cake in the towel and refrigerate for at least 1 hour to set.

    Once chilled, remove from the refrigerator, unwrap, and slice into pieces. Serve chilled or at room temperature.
