Prepare citrus and cucumber

Wash limes and cucumber. Using a sharp knife, slice 8–10 thin lime wheels for garnish and set aside. Juice the remaining limes to yield approximately 120–150 ml (about 5 limes). Slice the cucumber into thin rounds; reserve about 12 attractive slices for garnish and lightly bruise the remaining slices by pressing them with the back of a spoon to release juice and aroma.

Build the bottle/pitcher

In a clean 1.5–2 L pitcher or the empty gin bottle (if using bottle service), add the bruised cucumber slices, lime juice, and simple syrup. Add the fresh mint leaves and lightly slap them between your palms to activate oils, then add to the vessel. If using pink peppercorns, crush them lightly in a mortar or with the back of a spoon and add now. Pour in the 750 ml gin and stir gently for 20–30 seconds to combine and allow flavors to infuse.

Chill and rest

Cover the pitcher or seal the bottle and refrigerate for 20–30 minutes to let the cucumber, lime, and mint infuse the gin. This short maceration improves aroma without making the mixture bitter.

Assemble for service

When ready to serve, add ice to a serving pitcher or individual glasses. If serving straight from the bottle, pour the gin mixture into a chilled serving pitcher over ice. Add the tonic water (about 1500 ml) just before serving to preserve fizz; pour slowly over the back of a spoon or down the side to retain carbonation. Stir gently once to integrate—avoid vigorous stirring.

Garnish and serve

For each glass: fill with fresh ice, pour the gin & tonic from the pitcher, then add one or two cucumber rounds, one lime wheel, and a small sprig of mint. Optionally float an edible flower or a few pink peppercorns on top for visual flair. Serve immediately with straws or cocktail spoons.

Notes on portions

This bottle/pitcher recipe yields approximately 10–12 standard gin & tonic servings (about 180–200 ml each) depending on glassware and ice. Adjust tonic or ice volumes to taste. If you prefer a drier G&T, reduce simple syrup or omit entirely.
