Jaljeera-Cucumber Tonic
Chill tonic: ensure tonic water is well chilled (ideally refrigerated for several hours) so the drink stays crisp and bubbly.
Make cucumber juice: peel one small cucumber (or half a large), chop and press through a fine mesh sieve or use a blender and strain to yield about 60 ml of bright cucumber juice. Discard pulp.
Combine tonic base: in a mixing vessel gently combine 300 ml cold tonic water, 60 ml strained cucumber juice, 30 ml jaljeera concentrate, 15 ml fresh lime juice and 5 ml simple syrup (optional). Stir gently once or twice to integrate — avoid vigorous stirring to keep carbonation.
Taste and adjust: taste the tonic mix and adjust jaljeera (add up to 10–15 ml more if you want stronger savory spice) or simple syrup for balance. The mix should be tangy, mildly spicy-savoury, and cooling from cucumber.
Assemble Cocktail
Notes — Jaljeera Concentrate
Quick jaljeera concentrate: mix 1 tsp jaljeera powder with 30 ml water, 5 ml lemon juice and a pinch of salt; stir until dissolved. For a fresher concentrate, muddle 1/2 tsp roasted cumin powder, 1/4 tsp black salt, a pinch of chaat masala, a small pinch of crushed black pepper and 15 ml water, then strain into a small bottle and top to 30 ml. Keep refrigerated and use within 3 days.
