Cheesecake Ingredients

Method

Cheesecake Directions

  1. 1

    Prepare the Crust

Preheat the oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

  2. 2

    Bake the Crust

Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool.

  3. 3

    Make the Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined. Add the sour cream, vanilla extract, and salt, mixing until smooth.

  4. 4

    Add Eggs

Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

  5. 5

    Bake the Cheesecake

Pour the filling over the cooled crust in the springform pan. Bake for 50-60 minutes or until the center is set but still slightly jiggly.

  6. 6

    Cool and Refrigerate

Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour. Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours or overnight.

  7. 7

    Prepare the Berry Compote

In a saucepan, combine mixed berries, sugar, and lemon juice over medium heat. Cook until the berries break down and the mixture thickens, about 10-15 minutes. Let cool.

  8. 8

    Serve

Slice the cheesecake and serve with the berry compote drizzled on top.
