Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Stir in the vanilla extract.

Beat the Egg Whites
In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites in thirds, until no white streaks remain.

Chill the Mousse
Spoon the mousse into individual serving cups and refrigerate for at least 2 hours or until set.

Serve
Before serving, top each mousse with additional whipped cream if desired.
