Method

Preparing the Salmon

  1. 1

    Marinating the Salmon

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, black pepper, and fresh dill. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.

  2. 2

    Preheating the Grill

Preheat your grill to medium-high heat, about 375-400°F (190-200°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grilling the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for 6-8 minutes, then carefully flip and grill for another 4-6 minutes or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Seasoning the Vegetables

In a mixing bowl, toss the asparagus and cherry tomatoes with olive oil, salt, black pepper, and balsamic vinegar until evenly coated.

  2. 5

    Grilling the Vegetables

Place the seasoned vegetables directly on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 6

    Plating the Dish

Once the salmon and vegetables are done, remove them from the grill. Serve the grilled salmon fillets on a plate alongside the grilled seasonal vegetables. Optionally, garnish with additional fresh dill and lemon wedges.
