Method
Prepare the Chicken
- 1
Pound the Chicken
Using a meat mallet, pound the chicken breasts to an even thickness of about 1/2 inch. This ensures even cooking.
- 2
Season the Chicken
Sprinkle both sides of the chicken breasts with salt and black pepper.
- 3
Set Up Breading Station
In three separate shallow dishes, place the flour in one, whisk the eggs in the second, and mix the breadcrumbs with grated Parmesan cheese in the third.
- 4
Bread the Chicken
Coat each chicken breast first in flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
Cook the Chicken
- 5
Heat Oil
In a large skillet, heat olive oil over medium heat.
- 6
Fry Chicken
Add the breaded chicken breasts to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
Make the Sauce
- 7
- 8
Add Tomatoes and Seasonings
Pour in the crushed tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Stir to combine.
- 9
Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally until slightly thickened.
Assemble and Bake
- 10
Preheat Oven
Preheat your oven to 375°F (190°C).
- 11
Layer Ingredients
In a baking dish, spread a thin layer of marinara sauce, place the fried chicken breasts on top, and cover with remaining marinara sauce.
- 12
Add Toppings
Sprinkle shredded mozzarella cheese over the top and add fresh basil leaves if desired.
- 13
Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
