Prepare the Steak

Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking.

Season the Steak

Rub each steak with olive oil and season generously with salt and black pepper on both sides.

Grill the Steak

Preheat your grill or grill pan to medium-high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from heat and let rest for 5 minutes before serving.

Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the fries in cold water to remove excess starch, then pat them dry with a paper towel.

Fry the Potatoes

In a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches, being careful not to overcrowd the pot, for about 4-5 minutes or until golden brown and crispy. Remove the fries and drain on paper towels, then sprinkle with salt.

Herb Butter

Make the Herb Butter

In a small bowl, combine the softened unsalted butter, chopped parsley, chopped chives, minced garlic, and lemon juice. Mix well until all ingredients are thoroughly combined.

Serve the Herb Butter

Place a dollop of the herb butter on top of each grilled steak just before serving. It will melt and create a delicious sauce.
