Cook the Rice
Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions, either by boiling or using a rice cooker.

Stir Fry the Meat
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the meat and stir-fry until it is cooked through and browned, about 5-7 minutes. Remove the meat from the pan and set aside.

Cook the Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the onion and ginger, stir-frying for about 2 minutes until the onion is translucent. Add the bell peppers, carrots, and scallions, and continue to stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

Combine and Serve
Add your favorite stir-fry sauce (soy sauce, oyster sauce, or teriyaki sauce) to the mixture and stir well to combine. Cook for another 1-2 minutes to heat through. Serve hot over cooked rice.
