Renoo's Summer Rolls Recipe
A rice wrap, stuffed with ground pork, shrimp, carrots, mushroom, onion, garlic, cilantro, thai herbs and seasons and served with a yummy seafood sauce.

Prepare the Filling
In a large skillet, heat a tablespoon of oil over medium heat. Add the minced garlic and chopped onion, sauté until translucent. Add the ground pork and shrimp, cooking until the pork is browned and the shrimp is opaque. Stir in the carrots, mushrooms, cilantro, and Thai herbs, and season with salt and pepper to taste. Cook for an additional 2-3 minutes until the vegetables are tender. Remove from heat and let cool.

Prepare the Rice Wraps
Soak rice paper wraps in warm water for about 10 seconds until pliable. Lay them flat on a clean surface.

Assemble the Summer Rolls
Place a spoonful of the filling mixture in the center of each rice wrap. Fold the sides over the filling and then roll from the bottom up to form a tight roll. Repeat until all filling is used.

Serve
Serve the summer rolls with a side of seafood sauce for dipping.
