    Prepare the Noodles

    Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

    Prepare the Vegetables

    Julienne the carrot and bell pepper. Mince the garlic and slice the onion. Set all vegetables aside.

    Cook the Eggs

    In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and scramble until cooked. Remove from the pan and set aside.

    Stir-Fry the Vegetables

    In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic and sliced onion, and stir-fry for about 1 minute until fragrant. Add the julienned carrot and bell pepper, and stir-fry for an additional 2-3 minutes.

    Combine Everything

    Add the softened rice noodles, scrambled eggs, chili paste, soy sauce, and salt to the wok. Toss everything together and stir-fry for another 3-5 minutes until heated through.

    Add Fresh Herbs

    Remove the wok from heat and add the Thai basil and cilantro. Toss gently to combine.

    Serve hot, garnished with additional cilantro if desired.
