Prepare the Ingredients
Wash and chop all vegetables and meat into bite-sized pieces.

Heat the Pan
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat.

Cook the Meat
Add the chicken (or chosen meat) to the pan and stir-fry for about 5-7 minutes until fully cooked. Remove and set aside.

Stir Fry the Vegetables
In the same pan, add another tablespoon of oil if necessary. Add onions and stir-fry for 1 minute. Then add carrots, broccoli, cabbage, red and green bell peppers, and zucchini. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.

Combine Everything
Return the cooked meat to the pan and add scallions and cashew nuts. Stir everything together.

Add the Sauce
Pour in your choice of sauce (soy sauce, oyster sauce, or a stir-fry sauce) and toss everything together to coat evenly. Cook for an additional 2-3 minutes.

Serve
Remove from heat and serve hot over rice or noodles.
