    Prepare the Bulgur

    In a bowl, soak the cracked wheat in water for about 30 minutes, or until soft. Drain any excess water and set aside.

    Mix Ingredients

    In a large mixing bowl, combine the soaked bulgur, ground meat, chopped onion, pine nuts, cinnamon, allspice, salt, black pepper, and parsley. Mix thoroughly until all ingredients are well combined.

    Form Kibbeh

    Divide the mixture into equal portions and shape each portion into a football or oval shape, about the size of a small egg.

    Cook Kibbeh

    In a large frying pan, heat olive oil over medium heat. Fry the kibbeh for about 5-7 minutes on each side, or until browned and cooked through.

    Serve

    Remove the kibbeh from the pan and drain on paper towels. Serve hot, optionally with yogurt or tahini sauce.
