Preheat your oven to 400°F (200°C). Cut the eggplants in half lengthwise and place them cut side down on a baking sheet lined with parchment paper. Roast in the oven for about 30-35 minutes, or until the skin is charred and the flesh is soft.

Once roasted, remove the eggplants from the oven and let them cool slightly. Scoop out the soft flesh with a spoon and discard the skin.

In a food processor, combine the roasted eggplant flesh, tahini, garlic, lemon juice, olive oil, salt, and ground cumin. Blend until smooth and creamy.

Taste the mixture and adjust seasoning, adding more salt, lemon juice, or tahini as desired.
