Preheat the Oven
Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lightly flouring them.

Combine Dry Ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.

Add Carrots and Pineapple
Fold in the grated carrots and drained crushed pineapple until evenly distributed throughout the batter.

Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, carefully transfer them to a wire rack to cool completely.

Prepare the Cream Cheese Icing
In a mixing bowl, beat the softened cream cheese and unsalted butter together until creamy and smooth.

Add Sugar and Vanilla
Gradually add the powdered sugar and vanilla extract, continuing to beat until the icing is fluffy and well combined.

Frost the Cake
Once the cakes have cooled completely, place one layer on a serving plate. Spread a generous amount of cream cheese icing on top, then place the second layer on top and frost the top and sides of the entire cake.
