    Brining the Turkey

    In a large container, mix maple syrup, salt, and water until dissolved. Add black peppercorns, thyme, and rosemary. Submerge the turkey in the brine and refrigerate for 12-24 hours.

    Roasting the Turkey

    Preheat the oven to 325°F (163°C). Remove turkey from brine, rinse under cold water, and pat dry. Rub the turkey with butter and season with salt and pepper. Place on a roasting pan and roast for about 13 minutes per pound, or until the internal temperature reaches 165°F (74°C).

    Making the Gravy

    Once the turkey is done, remove it from the pan and let it rest. Pour the drippings into a saucepan, adding chicken broth to make 4 cups of liquid. In another pan, melt butter and whisk in flour to create a roux. Gradually add the drippings mixture and stir until thickened. Season with salt and pepper to taste.
