1. Prepare the Ingredients

Gather and prepare all the ingredients. Clean the mussels and clams, peel and devein the shrimp, and chop the chicken and vegetables.

2. Sauté the Protein

In a large paella pan or skillet, heat the olive oil over medium heat. Add the chorizo and cook for 2-3 minutes until slightly crispy. Then add the chicken pieces and cook until browned on all sides.

3. Cook the Vegetables

Add the onion, garlic, and red bell pepper to the pan. Sauté until the onion is translucent, about 5 minutes.

4. Add Rice and Broth

Stir in the rice, paprika, and saffron, coating the rice in the oil and seasoning. Pour in the chicken broth and bring to a simmer. Season with salt and pepper to taste.

5. Add Seafood

Once the broth is simmering, add the shrimp, mussels, clams, and peas. Cover the pan and cook for about 15-20 minutes until the rice is tender and the seafood is cooked through.

6. Rest and Serve

Remove the pan from heat and let it sit for 5 minutes. Serve with lemon wedges on the side.
