Method

Prepare the Lamb

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, rosemary, salt, and pepper. Rub this mixture all over the rack of lamb and let it marinate for at least 1 hour (or overnight in the fridge for better flavor).

    Grill the Lamb

    Preheat the grill to medium-high heat. Grill the lamb for about 20-25 minutes, turning occasionally, until the internal temperature reaches 130°F (medium-rare). Remove from grill and let rest for 10 minutes before slicing.

Make the Potato Gratin

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Layer Potatoes

    In a greased baking dish, layer half of the sliced potatoes, sprinkle with salt, pepper, and nutmeg. Add half of the heavy cream and half of the cheese. Repeat with remaining potatoes, cream, and cheese.

    Bake

    Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden and bubbly.

Roast the Cauliflower

    Prepare Cauliflower

    Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet.

    Roast

    Roast in the oven at 375°F (190°C) for about 25-30 minutes until tender and golden.

Prepare the Sun-Dried Tomato Cream Sauce

    Cook the Sauce

    In a saucepan, sauté minced garlic in a little olive oil. Add sun-dried tomatoes and cook for 2 minutes. Pour in heavy cream, bring to a simmer, and stir in Parmesan cheese until melted. Season with salt and pepper.
