Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Peppers
Wash the poblano peppers and dry them thoroughly.

Season the Peppers
In a bowl, combine olive oil, salt, black pepper, garlic powder, and smoked paprika. Brush this mixture over the poblano peppers.

Roast the Peppers
Place the seasoned peppers on a baking sheet and roast in the preheated oven for 20-25 minutes, turning halfway through, until the skin is blistered and charred.

Cool and Peel
Remove the peppers from the oven and let them cool slightly. Once cool enough to handle, peel off the charred skin.

Serve
Serve the roasted poblano peppers warm, paired with Memphis Mudd or Michigan Cherry Molasses.
