    Prepare the Chicken

    Cut the dark meat chicken into bite-sized pieces and set aside.

    Chop the Vegetables

    Slice the onion, bell pepper, and carrot. Trim the green beans and mince the garlic and ginger.

Cooking

    Sauté the Vegetables

    In a large pan or wok, heat the vegetable oil over medium heat. Add the sliced onion and cook until translucent, about 3-4 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

    Cook the Chicken

    Add the chicken pieces to the pan, stirring to combine with the vegetables. Cook until the chicken is browned on all sides, about 5-7 minutes.

    Add Curry Powder

    Sprinkle the yellow curry powder over the chicken and mix well to coat the chicken evenly.

    Add Coconut Milk

    Pour in the coconut milk, stirring to combine. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.

    Add Remaining Vegetables

    Add the sliced bell pepper, carrot, and green beans to the curry. Season with salt, black pepper, and red chili flakes to taste. Continue to simmer for an additional 10-15 minutes, until the vegetables are tender and the chicken is cooked through.
